Karen's Tatale

A delicious appetizer from Ghana (excellent with a Startini)

Serves 4

2 overrripe plantains
2-4 T. self-rising flour
1 small onion, finely chopped
1 egg, beaten
1 tsp oil (optional)
1 fresh green chili, seeded and chopped
oil, for shallow frying
watercress to garnish (optional)

Peel and mash the plaintains.  Place them in a  bowl and add enough flour to bind, stirring thoroughly.
Add the onion, egg, oil if using, salt and chili.  Mix well and let stand for 20 minutes.
Heat some oil in a frying pan.  Spoon in teaspoonfuls of mixture and fry in batches for 3-4 minutes, until golden, turning once.
Drain on paper towels.  Serve hot or cold, garnished with watercress if desired.

Chef Mulu’s Black-eyed Pea Salad

16 oz fresh cooked or 1 can black-eyed peas (If using canned, rinse well)
1/2 cup diced red onion
1 cup diced red bell pepper
1 cup diced green bell pepper 
1 cup diced cucumber
1 cup cooked quinoa
1 cup diced tomatoes (preferably small grape tomatoes cut in half)
1/4 tsp salt and pepper
1/2 tsp diced garlic
1/4 cup chopped parsley
Optional: 1/2 cup feta

1/4 cup lemon juice
3 tbsp tahini
2 tbsp olive oil
1 tbsp dijon mustard

In a small bowl, whisk dressing ingredients together and set aside. 
In a large bowl add all salad ingredients and stir to combine.
Add dressing to the salad and stir to combine.
Let sit in the fridge for half an hour. 
If you like, top with 1/2 cup of crumbled feta cheese and chopped parsley.

Bill's Nachos of Hope!

On a plate:

handful of tortilla chips

heap of black beans

spoon or two of olives

bunch of cheese of choice

Optional: sliced jalapeño peppers

Microwave on high one minute while dancing around the kitchen


Perfect pairing: any beer of your choice! (or any beverage, really)
